Ingredients

200g marinated white anchovies (see note), drained

1 white onion, thinly sliced

3 garlic cloves, thinly sliced

100ml extra virgin olive oil

100ml white wine vinegar

2 cups flat-leaf parsley leaves
Method

Step 1Lay the anchovies in a glass or ceramic dish. Scatter over onion and garlic, then pour over oil and vinegar. Season with pepper, then cover and marinate in the fridge overnight.

Step 2The next day, transfer to a serving dish, stir through the parsley, then serve as tapas with olives and cod salad.
