Fish burgers with lemon mayonnaise

Serve these chargrilled fish burgers garnished with healthy salad and lemon mayonnaise for a complete mid-week meal.

Ingredients

  • 80mls (1/3 cup) whole egg mayonnaise (S & W brand)
  • 1 lemon, rind finely grated, juiced
  • 2 teaspoons finely chopped fresh Continental parsley
  • Salt & ground black pepper, to taste
  • 4 bread rolls, halved
  • 2 tablespoons vegetable or canola oil
  • 500g redfish or flake/boneless fish fillets, trimmed
  • 8 butter lettuce leaves, washed, trimmed
  • 2 medium ripe tomatoes, sliced
  • Extra fresh Continental parsley sprigs, to garnish

Method

  • Step 1
    Preheat a chargrill or frying pan over medium-high heat.
  • Step 2
    Combine the mayonnaise, lemon rind, 1 teaspoon of the lemon juice, chopped parsley, and salt and pepper to taste in a bowl.
  • Step 3
    Lightly brush the bread rolls on both sides with 1 1/2 tablespoons of the oil. Place them on the chargrill or in frying pan and cook for 2-3 minutes on each side or until golden. Set aside.
  • Step 4
    Rub the fish fillets with salt and pepper to taste. Brush the chargrill or frying pan with the remaining oil and cook the fish for 2-3 minutes each side or until the flesh flakes when tested with a fork. Sprinkle the fish with 1 tablespoon of the remaining lemon juice. Place the bottom halves of bread rolls onto serving plates, top with lettuce leaves, tomato slices and then fish. Top with a spoonful of the mayonnaise mixture and cover with the bread roll tops. Serve garnished with the extra parsley.

Notes

gourmet tip: Use split Turkish bread or wood-fired bread instead of rolls. for the kids: Fish burgers – crumb the fillets with flour, egg and bread- crumbs and serve on hamburger buns. Omit parsley in the mayonnaise. leftovers: Use mayonnaise on sandwiches or in coleslaw. use lettuce in salads and sandwiches. Use parsley in pan-fried mushrooms with rocket in Menu 4 (see related recipe) or in sauces
