Garlic beef and onions with sprout salad

A quick sizzle in the wok is all that is required to create this tasty beef salad stir-fry.

Ingredients

  • 1 tablespoon rice vinegar or white vinegar
  • 3 teaspoons fish sauce
  • 2 teaspoons caster sugar
  • 4 garlic cloves, finely chopped
  • Freshly ground black pepper
  • 750g boneless beef sirloin steak, fat trimmed, cut into 3cm cubes
  • 2 1/4 tablespoons vegetable oil
  • 1 small red onion, halved, thinly sliced
  • 1 100g pkt snow pea sprouts, ends trimmed
  • 100g (1 1/2 cups) bean sprouts, ends trimmed

dressing

  • 1 tablespoon vegetable oil
  • 3 teaspoons rice vinegar or white vinegar
  • 3 teaspoons fish sauce
  • 1/2 teaspoon caster sugar
  • 1 garlic clove, crushed
  • Freshly ground black pepper

Method

  • Step 1
    Combine the vinegar, fish sauce, sugar and garlic in a medium bowl and season with pepper. Add the steak cubes and toss to coat the steak in the marinade mixture. Cover and place in the fridge for 1-4 hours to marinate.
  • Step 2
    Meanwhile, to make the dressing, combine the oil, vinegar, fish sauce, sugar and garlic in a screw-top jar and season with pepper. Shake well.
  • Step 3
    Heat 3 teaspoons of oil in a wok over medium-high heat. Add onion and stir-fry for 3-4 minutes or until soft. Transfer to a heatproof bowl and cover with foil. Drain steak from marinade. Heat another 2 teaspoons of oil in wok over medium-high heat and add a third of steak mixture. Stir-fry for 3 minutes or until steak is cooked to medium-rare. Transfer to heatproof bowl and cover with foil. Repeat with remaining oil and steak mixture in 2 batches.
  • Step 4
    Toss snow pea sprouts, bean sprouts and dressing in a bowl. Arrange on a serving platter and top with steak and onions. Serve immediately.

Notes

Prep: 20 mins (+ 1-4 hours marinating time) The recipe can be made to the end of step 2 up to 3 hours ahead. Keep the dressing aside at room temperature. Keep bean sprouts in a sealed plastic bag in the fridge. Continue from step 3, 15 minutes before serving.
