Ingredients

1kg thick boneless white fish fillets

375g cherry tomatoes

olive oil cooking spray

3 tablespoons Lemon, Herb & Garlic Seasoning

1 cup couscous
-
1 tablespoon butter
-
1 lemon, rind grated, juiced
-
1/4 cup flat-leaf parsley leaves, chopped

Lemon wedges, to serve

Method

Step 1Soak skewers in cold water for 30 minutes. Drain.

Step 2Cut fish into 3cm cubes. Thread fish and tomatoes onto skewers. Spray with oil. Sprinkle with herb seasoning.

Step 3Preheat a barbecue plate on high heat. Reduce heat to medium. Cook skewers for 4 minutes, turning, or until cooked through.

Step 4Place couscous into a heatproof bowl. Pour over 1 cup of boiling water. Cover with foil. Stand for 5 minutes. Add butter. Using a fork, stir to separate grains. Stir through lemon rind, juice, parsley, and salt and pepper. Serve with skewers and lemon.
