Ingredients

  • 1kg thick boneless white fish fillets
  • 375g cherry tomatoes
  • olive oil cooking spray
  • 3 tablespoons Lemon, Herb & Garlic Seasoning
  • 1 cup couscous
  • 1 tablespoon butter
  • 1 lemon, rind grated, juiced
  • 1/4 cup flat-leaf parsley leaves, chopped
  • Lemon wedges, to serve

  • 12 skewers

Method

  • Step 1
    Soak skewers in cold water for 30 minutes. Drain.
  • Step 2
    Cut fish into 3cm cubes. Thread fish and tomatoes onto skewers. Spray with oil. Sprinkle with herb seasoning.
  • Step 3
    Preheat a barbecue plate on high heat. Reduce heat to medium. Cook skewers for 4 minutes, turning, or until cooked through.
  • Step 4
    Place couscous into a heatproof bowl. Pour over 1 cup of boiling water. Cover with foil. Stand for 5 minutes. Add butter. Using a fork, stir to separate grains. Stir through lemon rind, juice, parsley, and salt and pepper. Serve with skewers and lemon.
