  • 4 (about 800g) fish fillets (like gemfish or ling)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons thinly sliced green shallots
  • 1 medium carrot, peeled, coarsely grated
  • 1 tablespoon finely chopped fresh mint
  • 2 tablespoons otive oil
  • Salt & ground black pepper, to taste
  • 3 (85g pkts) instant noodles (discard flavour sachets)
  • 2 tablespoons sesame seeds


  • Step 1
    Preheat oven to 180C. Cut 4 pieces of non-stick baking paper, each about 40cm in length. Lay the sheets of baking paper on a bench. Remove skin from fish fillets and place a fish fillet onto the centre of each sheet.
  • Step 2
    Evenly divide lime juice, green shallots, grated carrot, mint and 1 tablespoon of olive oil between the fish fillets. Season with salt and pepper. Fold the edges of baking paper together to seal well. Place fish parcels onto a baking tray and bake in preheated oven for 10-15 minutes or until fish is just cooked and flakes when tested with a fork.

Gourmet tip: Serve stir-fried Hokkien noodles instead of 2-Minute noodles.

For the kids: Fish with carrot, honey & noodles – omit green shallots in the fish parcels and add 1 tsp honey. Flake the fish into chunks to serve.

Microwave tip: Place fish parcels onto a microwave-safe plate or fish steamer and cook for 12 minutes on Medium/5OOwatts/50% or until fish is just cooked and flakes when tested with a fork.
