Ingredients

  • 1/4 cup (60ml) olive oil, plus extra to brush
  • 12 small (about 50-70g) whole fish (such as small whiting, garfish or sardines)
  • 2 tablespoons grated lemon rind
  • 2 garlic cloves, finely chopped
  • 2 tablespoons chopped flat-leaf parsley
  • 1 tablespoon finely chopped capers
  • Lemon wedges, to serve

Method

  • Step 1
    Line a shallow baking tray with foil, then brush with olive oil. Clean and scale the fish (see p 104), then lay flat on the baking tray. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper.
  • Step 2
    Preheat the grill to high.
  • Step 3
    Grill the fish for 1 1/2 minutes on one side, then turn over and cook for the same time on the other side.
  • Step 4
    Combine the remaining oil, lemon rind, garlic, parsley and capers. Place fish on serving plates and spread mixture over top. Serve with lemon wedges.
