Smoked ocean trout and broad bean pasta salad

Ingredients

  • 300g penne pasta
  • 300g frozen broad beans
  • 150g smoked ocean trout, thinly sliced
  • 1 medium red onion, thinly sliced
  • 2 tablespoons chopped fresh dill
  • 2 teaspoons finely grated lemon rind
  • 2 tablespoons lemon juice

Method

  • Step 1
    Cook pasta in a large saucepan of boiling, salted water, following packet directions, until just tender. Drain.
  • Step 2
    Cook beans in a small saucepan of boiling water for 2 minutes or until just tender. Drain. Rinse under cold water. Remove and discard outer skins.
  • Step 3
    Place pasta, beans, trout, onion, dill, lemon rind and lemon juice in a bowl. Toss to combine. Serve.
