Smoked salmon & avocado sandwiches

Prepare these gourmet sandwiches for a high tea experience at home.

Ingredients

  • 8 slices wood-fired bread
  • 4 tablespoons good quality mayonnaise
  • 120g smoked salmon
  • 2 teaspoons drained capers, rinsed
  • 1 ripe avocado, peeled, deseeded, sliced
  • 1 lemon, halved
  • 30g snow pea sprouts
  • Salt & ground black pepper, to taste

Method

  • Step 1
    Spread 4 of the bread slices with the mayonnaise. Top with the smoked salmon, capers and avocado. Squeeze over some lemon juice and then top with the snow pea sprouts. Cover with the remaining bread slices and then cut into desired portions. Place on a plate, cover with plastic wrap and then a damp tea towel. Keep in the fridge until required.
