Ingredients

4 bagels
-
1 ripe avocado
-
1 cup wild rocket leaves

1 tomato, thinly sliced
-
1/2 Lebanese cucumber, thinly sliced

16-24 slices smoked salmon (depending on size)

1/2 small red onion, thinly sliced

1 tablespoon red wine vinegar

1 tablespoon olive oil
Method

Step 1Preheat the grill to high. Split the bagels and toast under the grill for a few minutes until lightly golden. Place 2 halves on each serving plate.

Step 2Halve the avocado and remove the stone. Scoop out the flesh and spread on bagels.

Step 3Add some rocket, then tomato and cucumber slices. Top each bagel half with 2-3 smoked salmon slices, then red onion.

Step 4Place the red wine vinegar and olive oil in a small bowl and whisk to combine.

Step 5Drizzle the dressing over the bagels, then season with salt and freshly ground black pepper. Serve immediately.
