Steamed fish with melon salsa

This sensational fish dish pairs fresh blue eye cod with a zesty melon salsa.

Ingredients

  • 6 baby potatoes
  • 2 x 175g ling fish fillets
  • 1/8 rockmelon, peeled, finely chopped (see Note)
  • 200g seedless watermelon, peeled, finely chopped (see Note)
  • 1/2 long red chilli, deseeded, finely chopped
  • 1 teaspoon finely chopped basil
  • 1 tablespoon extra-virgin olive oil, plus extra to drizzle
  • 1 teaspoon lime juice

Method

  • Step 1
    Steam potatoes in a large steamer over a saucepan of boiling water for 15 minutes. Season fish and place each fillet on a small piece baking paper. Place fish on potatoes. Steam potatoes and fish for another 15 minutes or until potatoes and fish are cooked.
  • Step 2
    Meanwhile, combine melons with chilli, basil, oil and lime juice. Season and gently toss to coat.
  • Step 3
    Place fish and potatoes on 4 serving plates. Spoon over melon salsa and drizzle with extra oil if you like.

Notes

We used both rockmelon and watermelon, but you could use only 1 type of melon or also add some honeydew melon.

Make this in the Tefal Cuisine Companion: Pour 700ml water in the bowl upto the fill line inside the bowl. Place potatoes in steam basket. Place the basket in the bowl. Launch the steam program for 15 minutes. Season fish and place each fillet on a small piece baking paper. Place fish on potatoes. Launch the steam program for 15 minutes or until potatoes and fish are cooked. Meanwhile, combine melons with chilli, basil, oil and lime juice. Season and gently toss to coat. Place fish and potatoes on 2 serving plates. Spoon over melon salsa and drizzle with extra oil if you like.
