Thai massaman curry paste recipe

Ingredients

  • 3 shallots, sliced
  • 5 cloves garlic, peeled
  • 2 red chillies, de-seeded
  • 10g galangal (or ginger), peeled and sliced
  • 2 stalks lemongrass, outer leaves and bulb removed, thinly sliced
  • 2 kaffir lime leaves
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1 teaspoon ground cardamom
  • 2 tablespoon fish sauce
  • 1 teaspoon shrimp paste
  • 1/2 can coconut milk (see notes)
  • Additional fish sauce, to taste (add fish sauce instead of salt)

Method

  • Step 1
    Grind coriander seeds, cumin seeds and nutmeg in a pestle and mortar.
  • Step 2
    Place all ingredients in a food processor (or blender) and process well.
  • Step 3
    To use immediately, place sauce in a casserole or baking dish together with chicken, seafood or vegetables.

Notes

To make a sauce rather than a paste, add more coconut milk.
