Ingredients

  • 1 180g can tuna, drained
  • 60mls (1/4 cup) good quality mayonnaise
  • 1 celery stick, diced
  • 1 teaspoon chopped fresh thyme
  • Salt & ground black pepper, to taste
  • Green coral lettuce leaves, to serve
  • 1 ripe tomato, thickly sliced, to serve
  • 4-6 bread slices of your choice, to serve
  • Extra virgin olive oil (optional), to serve

Method

  • Step 1
    Combine tuna and mayonnaise in bowl. Add celery and thyme and stir well. Season well with salt and pepper.
  • Step 2
    Arrange lettuce and tomato slices on half the bread slices. Top with tuna mixture. Drizzle with a little extra virgin olive oil, if using, and top with another bread slice
